Nico’s Claussen-like Pickles

Nico’s Claussen-like Pickles

3 cups boiled water, cooled
5 garlic cloves, diced
8 pickling cucumbers
6 sprigs fresh dill
1 tablespoon of pickling salt
1/2 cup white vinegar
Pinch of peppercorns
Pinch of turmeric
Pinch of crushed red pepper
Pinch of dill seeds

Put garlic and all spices in the bottom of a glass jar.  Add the cucumbers.  Add the salt and vinegar, then add the water to 1/8 inch of the top.  Add the dill sprigs around the cucumbers.  Put the lid on and shake to dissolve the salt.  Refrigerate.

*These pickles taste best after at least 1 week of refrigerating, however we usually can’t wait that long and start taste testing them after the second day!  Enjoy!
